Muddle the mint. Add the mint leaves, lime, and rum syrup to a large glass. Using a muddler or a wooden spoon, mash mint leaves and lime to release the lime juice and the mint flavor.
Fill the glass with ice. Generously fill the glass with ice cubes or slightly crushed ice.
Pour in the remaining ingredients. Next, add the apple juice and sparkling water to the glass and stir to combine.
Garnish. You can then garnish with more mint leaves and lime wedges. Serve immediately!
Notes
Do not omit the muddling step. Muddling the mint leaves is essential to release their natural oils.
Make a pitcher. While the given recipe is for one mojito, we highly recommend tripling or quadrupling the recipe to make a pitcher for your party.
If making a pitcher: Pulse fresh mint in a processor or chop it roughly to save the hassle of muddling in each glass.
Adjust sweetness to taste. Be sure to adjust the amount of sweetener to your liking by tasting the mocktail as you go because preferences vary; some prefer sweeter, others less.
