Vegan Vietnamese Ragu

This classic Vietnamese stew is loaded with mushrooms, carrots, and potatoes and served in a rich and savory tomato broth!

Easy to prepare, warming, and so delicious!

Main ingredients: mushrooms, carrots, potatoes, tomato, tomato paste, sugar, salt, and optional spices.

Sauté the minced shallots and garlic. Add the tomato paste and mushrooms and sauté for 3 more minutes.

STEP 1

Simmer everything in a deep pot for 20-25 minutes or until potatoes and carrots are tender.

STEP 2

Garnish with a handful of fresh cilantro and thinly sliced onion.

STEP 3
