Main ingredients: vegan butter, shallots, garlic, ginger, spices, red lentils, diced tomatoes, tomato paste, and coconut milk.
Sauté the aromatics.
STEP 1
Add the lentils, diced tomatoes, tomato paste, water, salt, and sugar. Simmer for 20-25 minutes. Pour in the coconut milk and stir to combine.
STEP 2
Simmer the curry uncovered, stirring regularly, for another 10-12 minutes or until it slightly thickens.
STEP 3
