Creamy Cucumber Gazpacho

This super creamy cucumber gazpacho requires just one blender and 10 minutes!

It’s healthy, light, and SO FRESH!

Main ingredients: cucumber, cashews, coconut milk, pesto, lemon juice, miso and mint.

Soak the cashews. Next, prepare the cucumbers.

STEP 1

Add all of the ingredients to a blender.

STEP 2

Blend on high speed for 1-2 minutes or until the consistency is very smooth.

STEP 3

Transfer the gazpacho to a bowl or saucepan and chill it in the refrigerator for at least 4 hours, preferably 6 hours.
