This super creamy cucumber gazpacho requires just one blender and 10 minutes!

Main ingredients: cucumber, cashews, coconut milk, pesto, lemon juice, miso and mint.
Soak the cashews. Next, prepare the cucumbers.

Add all of the ingredients to a blender.

Blend on high speed for 1-2 minutes or until the consistency is very smooth.
